Gluten-Free Gingerbread Cake: 

A Cozy Treat for Fall

 

As the leaves turn and the air grows crisp, there’s nothing quite like a warm, spiced treat to bring comfort and grounding. This Gluten-Free Gingerbread Cake is lightly sweetened, spiced with cardamom and cinnamon, and perfect for sipping tea alongside a quiet moment — or sharing with loved ones.

It’s a recipe that invites mindfulness: feel the aroma of the spices, the warmth of the batter, and the gentle rhythm of baking as a simple act of self-care.

 

 

Ingredients 

  • 2 cups almond flour

  • 2 tbsp coconut flour

  • ½ tsp baking soda

  • ¼ tsp sea salt

  • 2 tsp ground ginger

  • 1 tsp ground cardamom

  • ½ tsp cinnamon (optional)

  • ¼ cup coconut sugar or jaggery powder

  • 3 tbsp melted coconut oil or ghee

  • 3 tbsp maple syrup 

  • 1 tsp vanilla extract

  • 2 large eggs (or flax eggs for vegan option)

Optional: sprinkle sesame seeds or slivered almonds on top for texture and digestive support.

 

 

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a small loaf pan with parchment.

  2. In a large bowl, whisk together almond flour, coconut flour, baking soda, salt, and spices.

  3. In another bowl, combine coconut sugar, melted coconut oil/ghee, maple syrup, and vanilla. Mix until smooth.

  4. Stir the wet ingredients into the dry ingredients until a thick batter forms. Add eggs (or flax eggs) and mix until incorporated.

  5. Pour the batter into the prepared pan, smooth the top, and sprinkle optional seeds or almonds.

  6. Bake for 25–30 minutes, or until a toothpick inserted comes out clean.

  7. Let cool slightly before slicing. Enjoy with tea, or a quiet moment to yourself.
